Taste of the West Country Stand

I am looking to run a street based stand during Summer 2012 selling a range of high quality, artisan food products freshly made in the West Country. I have 2 questions! Firstly, would this be popular? And secondly how would I go about getting the right permission for this?
Many thanks!

The suppliers I have interested at the moment include fudge, ice cream, cakes and pastries, and hot pies and pasties! Do you know where to get a trading licence?

Supposing you wanted to join the Lower Marsh market, the answers would appear to be here: StreetTradingLambeth.pdf
Your hot pies and pasties would be in competition with the two Greggs, though.
Having just returned from a spell in Wiltshire, I agree with Boss - pork products and cheese.

Try the Southwark Council market management team - they give out the licenses on public land. Or take a look at the new set up on Matby Street Saturday mornings, there might be someone who could help you over there.
