Oil from an Olive?

I often buy olives from the Borough Market Olive stall in the market, very tasty too. I asked the chap at the stall about the nutritional content of an olive but all he could tell me was that they contained olive oil, which is good for us. I kind of took that as bleeding obvious but wandered if anyone on this forum could tell me what's actually in an olive.

There is a stone inside that is tricky to remove during chewing as it sticks to the inside of the olive. Sorry to be flippant!
