Chicken Tikka
4 x medium boneless chicken breasts
2 x tablespoons of lemon juice
1 cup plain yoghurt
1 x tablespoon of grated garlic
1 x tablespoon of grated ginger
1/2 teaspoon of cumin
1/2 teaspoon of turmeric
1 tablespoon of cayenne pepper
1/3 teaspoon salt
1/3 teaspoon pepper.
Olive oil
Lime wedges to serve.
Chop chicken into cubes (decent size), prick with fork and throw into bowl with lemon juice, give a good swish around and leave it 5 mins, then add rest of ingredients.
Marinade for as long as possible, minimum 1 hour.
Put on skewers and brush with olive oil and grill under medium heat, after 6 mins, turn over and brush with Olive oil, grill again for a further 6 mins.
Of course, cooking times may vary.
