Tsuru sushi is hand-made in an open kitchen using using sustainable produce - free range chicken, outdoor-reared pork and fish from sustainable sources.
Opened by Kensuke Yamada and two friends, Tsuru aims to be the antidote to mass-produced, poorly prepared sushi.
Damian Tillson from Sotheby's Wine Department has selected a wine list for the restaurant.
